I prefer the chop but am partial to both. I just love when the victim lets out a grunt or oof before going unconscious.

It certainly is possible in real life the chop would be fatal. However, it does seem at least in fiction the technique is used to knock people out.
The second and third one I am unsure of though.
Second one you can not actually see where the blow lands. Third one seems like a lower head blow given how she suddenly moves her head, but the angle is hard to tell.
I suspect that these clips may be due to broadcaster regulations, depending on the type of show and what time of day it's broadcasted. Like they have to tone down the violence, a direct blow to the head may be too much!
I remember an old British show, Robin of Sherwood in the 80s. Had quite a lot of death by swords and arrows. But they could only show a fatal sword strike as a side slash and NOT a forward thrust/stabbing motion. And all hits had to be in the chest area or the back. Same with arrows. No head shots allowed!

I just remembered another really good neck chop scene. In the move The Temptress of a Thousand Faces, a woman is robbing jewelry from a fashion show. In the room where the models are getting ready a female guard is posted. She comes up to the woman and strikes her in the base of her back apparently paralyzing her. Then she simply moves her to the correct position for an easy neck chop and knocks her out.
