At the same time the way the nerves travel through a woman's neck they are very vulnerable. A woman's neck makes them an easy target. As the throat is the most vulnerable part on the human body, especially for women. And the best takeouts are when the victim doesn't even know the intruder is there.
And Ellana makes sure that her victims don't suffer too much pain, she's still a scientist after all who respects life.
