Why not make the demon a demonness, she can seduce and kill one of the knights, steals her identity and armour. She infiltrates the order, seducing the knights draining their mana and sexual energy making them her docile obedient servants.

She decides to make things go a little faster, so she kills the Knight-Commander, steals her identity. She corrupts the entire order, as enough mana to bring her demon army through, takes over the world. The knights become her elite guard.

When I read your paragraph this morning, I just came up with the idea of the Succubus/Demoness off the top of my head. It will add the uniform stealing as well as the identity stealing element(which i'am rather partial too.) Do you plan to add an heroine or is the demoness an anti hero like character?

Make the seduction and takedown of the Knight as sexy as possible, then you can work towards the Knight-Commander replacement and corruption of the knights.
